This project is a wagyu restaurant located in Kyoto’s Nishiki Market. Situated on a corner facing two streets, the restaurant was designed primarily for international visitors, with a sophisticated, predominantly black interior that conveys a sense of Japan. Rather than relying on familiar Japanese motifs, the design reinterprets materials and forms rooted in Japanese architecture and everyday life within a contemporary dining space.
At the center of the restaurant is a mid-height counter surrounding a pine bonsai, creating a focal point that draws views inward from both streets. The counter takes the form of a teardrop, inspired by the idea of wind in bonsai. Its flowing outline references fukinagashi, a bonsai style in which the trunk and branches appear to be shaped by a continuous wind blowing in one direction.
The surrounding interior is composed of distinctly Japanese materials within a restrained black palette, including black-stained bamboo on the counter, kawara roof tiles used as flooring, and washi paper on the walls. In the rear seating area, a lighting piece from “SOGA,” an ongoing collaboration with craftsman Ryota Ebitani, transforms a metal grilling mesh through the traditional ikkambari technique, applying washi and persimmon tannin to create a lampshade. By shifting familiar Japanese materials, forms, and techniques into new functions, the project seeks to create a contemporary landscape specific to this place.

京都・錦市場に位置する、和牛料理を主としたレストラン。計画地は二つの通りに面した角地で、海外からの来訪者を主な客層とし、黒を基調とした高級感と日本らしさを感じられる空間が求められた。そこで、分かりやすい和の記号を重ねるのではなく、日本の素材や造形を現代の飲食空間の中で捉え直すことを考えた。
空間の中心には、松の盆栽を据えたミドルカウンターを配置。二方向からの視線を店内中央へ引き込む求心性のある構成とした。カウンターは、盆栽の「吹き流し」に見られる風の方向性から着想し、輪郭が一方向へ流れる雫型としている。
周囲は黒を基調に、カウンター腰の黒染竹、床の瓦タイル、壁面の和紙など、日本の建築や暮らしに根差した素材を取り入れた。また奥の客席には、蛯谷氏と共同で取り組む「SOGA」による照明を設置。肉を焼くための網に一閑張を施し、和紙と柿渋によって照明のシェードへと転換している。日本の素材や造形を新たな用途へ置き換えながら、この場所ならではの風景をつくることを目指した。
